Ingredients:
6-8 large carrots, peeled and chopped
3-4 tablespoons butter
1/2 cup heavy cream
2 tablespoons honey
Pinch of salt
Instructions:
Prepare the carrots: Place the peeled and chopped carrots in a large pot. Cover them with water and bring to a boil. Reduce heat to a simmer and cook until the carrots are very tender, about 20-25 minutes.
Drain: Once tender, drain the carrots well and return them to the pot or place them in a large mixing bowl.
Add butter and cream: While the carrots are still warm, add the butter and heavy cream. Mash or blend the mixture until smooth and creamy. You can use a hand blender, food processor, or a potato masher depending on your texture preference.
